What’s your best tip when it comes to helping a bride plan her menu?
When planning a menu, it’s important to think about the experience you would like your guests to have and what types of cuisine are special and meaningful to you. We start by discussing the flow of the reception and make a recommendation about what service style or combination of styles will help achieve your goals: passed or displayed hors d’oeuvres and plated, buffet or action stations for meal service. We also love to create custom menus for our clients and their guests. Inspiration can be found everywhere from family recipes, ethnic backgrounds, favorite restaurants or even your first date! Wedding catering is often the most expensive meal couples will ever purchase, so it should be special, delicious and tailored for your budgets.
What’s the hottest new food all of your brides are asking for?
One of the most popular requests we’ve received is for our Vertical Bento Box. A custom creation for each wedding, it is a Chef Bar display that draws its inspiration from the popular Japanese style meal box. Although it can be used to artfully present a wide array of menu items, it is typically used to feature Asian-inspired dishes in an hors d’oeuvre or small- plate portion size. The Vertical Bento Box literally is a Chef Bar with a twist! Set atop a rotating axis, the display is attended by a culinary team who continually rotates the box to replenish the food from out of sight. Compartments in the Box are accented with mini spotlights, custom wrapped books whose spines display titles of the menu items, and petit serviceware items. It’s a delightful way to incorporate cuisine into your event décor.
How do you help brides who are on a limited budget?
We believe it’s important to take time and educate our clients and potential clients about the many aspects involved in wedding catering – from cuisine and service style to our expertise in insurance and food safety. This helps everyone come to the table with realistic and exciting expectations about budgeting and planning. Even when budgets are tight, it’s important to step back and think about what aspects of your reception are most important and then splurge in those areas, while saving in areas that are less of a focus.
