We love to have a good time, especially when its for a great cause! We had the honor of participating in the March of Dimes Signature Chef Event held at the Ballroom at Church Street. Our very own Chef Paul Lorrain was the Host Chef of the night and created the ultimate dining experience of fine cuisine and beverage pairings along with other top local chefs. Guests had a phenomenal time as they ate and drank their way around the ballroom while enjoying various live entrainment. Each attendee was given a ticket, and after they tasted their favorite plate they dropped their ticket in the appropriate bowl to determine the Fresh Point Flavor Award Winner of the evening. The unique assortment of silent auction items was a huge hit, and of course how can you not love it when it’s for such a fabulous cause! The night ended sweetly with a white chocolate mouse cornucopias accompanied with fresh fruits of the season and the announcement of the Fresh Point Flavor Winner…. and the award went to our very own Chef Paul Lorrain!

On Sunday, February 20th, the Puff ‘n Stuff Catering wedding team participated in the first annual Winter Park Bridal Stroll on beautiful Park Avenue! Brides and friends, thanks for visiting us at Be On Park. Couples had the opportunity to mingle with Puff ‘n Stuff Catering Special Event Planners and sample hors d’oeuvres including:

  • Polenta Cubes with Parmesan aioli, fire-roasted tomatoes, capers, and shaved Parmesan cheese
  • Tomato Mozzarella Caprese Cornets with fire-roasted tomato crème fraîche

Puff ʻn Stuff Catering Acquires Tampa-Based Catering by Design

Central Floridaʼs Largest Catering Company Intensifies its Expansion to Floridaʼs West Coast

ORLANDO & TAMPA, Fla. – February 22, 2011 – Puff ʻn Stuff Catering President & Owner Warren Dietel announced his companyʼs acquisition of Tampa-based Catering by Design, effective April 1, 2011. Founded in Central Florida in 1980, Puff ʻn Stuff Catering formally began operations in Tampa on July 1, 2010 as the exclusive caterer at TPepinʼs Hospitality Centre.

“This opportunity was presented at the perfect time to complement our expansion into the Tampa Bay market. Puff ʻn Stuff Catering will reach several key milestones in Tampa this year including opening a dedicated local office space, catering all local off-premise events from our kitchen at TPepinʼs Hospitality Centre, and fully staffing these events with local service teams. Several members of the Puff ‘n Stuff Catering team attended the Tampa Bay NACE (National Association of Catering Executives) meeting on Tuesday evening. This was a special gathering to install the 2011 Board Members and present the annual chapter awards. We’re honored and humbled to say that after operating in the Tampa Bay area for less than a year, we were recognized in both of these areas.

Aymee Brace, a Puff ‘n Stuff Catering Special Event Planner, was installed for her third term as Chapter Vice President of Membership and recognized as Member/Caterer of the Year. We’re so proud of Aymee and her dedication to serving her clients, community and industry! I am Director of Catering Operations. Everything reports back up to me. I oversee the logistics department, the kitchen operations, the service department, fleet management, it all comes back up to my responsibility. Most of the operations and behind the scenes, we just make it happen. Whatever the client wants, we make it happen. Puff ‘n Stuff is really diverse in many different ways. There are so many different things, for example, the challenges [I face] every single day, you never know what surprises may come up, so it is always exciting!

“We’ve won a number of awards and the first really was in 2006, we were a finalist for the Event Solutions Caterer of the Year Award.  We look at that as really the Holy Grail of the industry for us because it encompasses not only catering, but event production, design, entertainment, and all facets of the entertainment industry.  We weren’t happy with just being a finalist and a year later in 2007, we resubmitted once again and we were given the award.  It’s really a great thing, there are only 9 Caterers in the world that have received this award.  We’ve won a number of local awards, we’ve been recognized by the Knot, by Brights.com for a lot of excellence within the event and wedding industry, and most recently the Orlando WOW Awards.  We were just honored as both the caterer of the year and for a catering event.  When I think about the awards and what that should really mean to our clients, I think that should more than anything else, it leands credibility to us.  I think that helps them understand that they are coming to a company that has a reputation, that is recognized.  You can come to us and depends on us.  You can lean on us for your event.  It takes a tremendous amount of time to pull together these awards and submissions for these awards.  But actually being recognized and receiving the award is quite prestigious and we are very very proud of that.”

Puff ‘n Stuff Catering’s Executive Chef, Paul Lorrain, visited Orlando’s Fox 35 Morning Show today to demonstrate an “at home” version of our popular Lobster Mac ‘n Cheese, and help promote the March of Dimes 2010 Signature Chefs event.

Hosted by anchor Heidi Hatch, Chef Paul taught viewers how to make Lobster Mac ‘n Cheese, as well as a beautiful Cheddar Cheese Tuile to garnish this tasty dish. We were excited for the opportunity to share a fun recipe, while helping spread the word about the March of Dimes’ annual gala fundraiser, Signature Chefs.

Chef Paul and 11 other top executive chefs from Central Florida will be paired with local community celebrities to prepare a gourmet feast for a fun-filled evening.  Participants are invited to bid in a live and silent auction that will include priceless dining and travel packages. Guests experience an amazing evening filled with delicious foods and wine pairings and the feeling that comes with philanthropic compassion, since proceeds benefit the March of Dimes.

The event is Thursday, October 21st at The Ballroom at Church Street and tickets ($195) are still available by calling 407-599-5077.

Lobster Mac ‘n Cheese
Demonstrated by Chef Paul Lorrain – “Not your momma’s mac ‘n cheese!”
Serves 4

1 Cup Lobster meat, fresh
1 Cup Peas
½ Cup Prosciutto, chopped or thinly sliced
2 TBSP Extra virgin olive oil
2 Cups Pasta, cooked
2 Cups Heavy cream
1 Cup Grana Padana cheese, grated
1 Pinch Nutmeg
½ TSP White pepper
½ lb Butter
2 Egg yolks
1 Cup Cheddar cheese, shredded
6 Basil leaves
1 Cup Vegetable oil

In a saucepan, heat the heavy cream, beaten egg yolks, nutmeg and white pepper. Stir and bring to a simmer. Add the grated Grana Padana cheese and butter, mixing well.

In a large, greased saucepan, sprinkle the cheddar cheese into four piles, and melt over medium heat. Lift the cheese out of the saucepan with a spatula, and drape over a small upside-down bowl to form a semi-cup. Allow cheese to cool and harden.

Heat the vegetable oil in a small saucepan. Drop in the whole basil leaves, frying them until they cease bubbling. Remove and place on a paper towel to drain.

In a large saucepan, sauté the prosciutto in the extra virgin olive oil. Add the peas, pasta and Grana Padana cheese sauce. Warm all ingredients through, and add the lobster meat, stirring until it is completely cooked. Season to taste.

Place the cheese tuile cup on a plate, scoop pasta into the cup, and allow it to flow onto the plate. Garnish with fried basil leaf and serve.
