Today we’re debuting more rave worthy dishes, which were showcased at our Fresh from Florida NACE meeting at our Orlando commissary. Our goal was marrying locally sourced ingredients with exceptional décor to create an enriching regional food experience.

We started by partnering with quality purveyors to provide the freshest Florida based ingredients. We then took the science of deliciousness a step further, by expertly preparing and presenting the dishes in an unexpected way. During the event, our culinary team cooked the exquisite fare directly in front of our corporate meeting planner guests, and the finished dishes were offered fresh from the hot line. This gave attendees the opportunity to ‘walk the line’ and select from the five exciting surf and turf themed dishes below.

Hot Line Mega Action Station: Surf ‘n Turf

The Surf ‘n Turf Carpaccio was prepared with a filet of beef crudo, sliced paper thin and wrapped around an olive oil poached lobster tail. It was accompanied by mustard aioli, then topped with micro greens and shaved Parmesan to provide a perfectly balanced bite.

The beautiful blended of crunchy and soft took center stage in our snapper and scallop ceviche duo. The delicate flavors of the fresh seafood were enhanced with zesty lemon vinaigrette and paired with a thin slice of mild red onion, mango salsa and a wonderfully salty plantain chip.

Expertly prepared Atlantic blue crab cake, seared to a crunchy golden brown. Served atop a bed of locally sourced greens, and finished with a drizzle of zesty chipotle remoulade.

This perfectly sized, grilled mini pork shank was basted in a lip-smacking mojito BBQ glaze and served along side a sea salt-crusted fingerling potato.

A pepper seared beef tenderloin served on a pillow of rich, flavorful shiitake mushrooms and tuxedo barley risotto completed with a fragrant balsamic truffle glaze.

Alongside our mega action station located in the heart of the Puff ‘n Stuff Catering kitchen was a custom designed bar using 6’ ivy walls created by the award-winning designers at Raining Roses productions. Hanging from the oversized ivy wall were lush bunches of fresh grapes, which provided the perfect backdrop to the pinots and merlots being served by ABC Liquors.
